If you're going with the waffles, I just learned (as I smell burnt gingerbread everywhere right now...lol), some mixes ask for one egg some two. There's got to be a total of four eggs in the recipe or the waffles won't cake up. I do three eggs, one white for hubby.
If you don't have gingerbread mix (I got mine at Walmart), here's the long recipe I was using originally and tweaked:
3.5 cups all-purpose flour 5 teaspoons baking powder 3 teaspoons ground cinnamon 2 teaspoons ground ginger 1/2 teaspoon nutmeg 1/2 teaspoon salt 1/2 teaspoon cloves (optional) 1/2 tablespoon candied ginger, chopped (also optional) 4 large eggs (I use large white but brown's fine) 2/3 cup packed dark brown sugar 1 1/3 cups milk 1/2 cup molasses 1/2 cup dark brown sugar 1/2 cup melted butter, plus some to butter the iron
I mix all the dry (because it's like making your own future gingerbread mix for just about anything), then wet. Treat like you would muffns, just combine don't overmix.
