-arms in air- Seriously, I think my hair is going white and I am officially addicted to gingerbread. I made gingerbread pancakes today and ingerbread brownies. Oh woe. If only they turned out horrible but darn it all, my cursed baking hand actually came out a winner. LOL.

Just to keep everything orderly and me on track, this is the posting schedule I am praying to stick to for The Oncoming Storm:

Act III: Saturday 8PM EST
Act IV : Sunday 8PM EST
Act V : Monday 6PM EST
Act VI : Tuesday 6PM EST
Act VII: Wednesday 8PM EST (Christmas Eve)

And if I survive the dinner, the in-laws, the ripping into presents, the crumbs sure to collect, the Epilogue will be posted Friday 9PM EST.

Oddly, knowing we're so close gets me teary eye...

Gingerbread mix sifted in with pancake mix, extra egg white to soften it up. Whipped heavy cream with cinnamon and a tsp of powder sugar for topping.

Mmmm....great, just got another idea, maybe use the mix for waffles, maybe serve with butter pecan ice cream as dessert. My family is going to think mommy is losing it if I serve them more gingerbread today. LOL

Well the kids think that pumpkin pancakes are to die for, I never get any pumpkin cookies 'cause of it!

Oh butter pecan, dang too many options!
Gonna have to go with waffles though, kids just over ruled me on the pancakes. sigh LOL oldest wants to use the waffle maker.

If you're going with the waffles, I just learned (as I smell burnt gingerbread everywhere right now...lol), some mixes ask for one egg some two. There's got to be a total of four eggs in the recipe or the waffles won't cake up. I do three eggs, one white for hubby.

If you don't have gingerbread mix (I got mine at Walmart), here's the long recipe I was using originally and tweaked:

3.5 cups all-purpose flour
5 teaspoons baking powder
3 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon cloves (optional)
1/2 tablespoon candied ginger, chopped (also optional)
4 large eggs (I use large white but brown's fine)
2/3 cup packed dark brown sugar
1 1/3 cups milk
1/2 cup molasses
1/2 cup dark brown sugar
1/2 cup melted butter, plus some to butter the iron

I mix all the dry (because it's like making your own future gingerbread mix for just about anything), then wet. Treat like you would muffns, just combine don't overmix.

I bow to your cooking expertise! And the best thing this morning? The girls wanted to use your recipe! So I am sitting at the table (okay I should be studying bio-chem) drinking a cup o tea and reading.
